What a weekend it turned out to be.  Parted out a 355lb Berkshire whole hog and turned it into "prime cut sausage".  People we used it all.  I am here to tell ya there is no better sausage then when you use the prime cuts.  Some people would say it was a waste but i truly disagree.  If done right and with love you can easily make hotlinks or Andouille sausage the cornerstone of your bbq event.  

My tip of the week... Make friends with your local butcher or butcher supply house.  They always seem to have the best natural casting need for true authentic sausage.
